Ingredients

  • 1 cup soy sauce
  • 1/3 cup sugar
  • 4 teaspoons vegetable oil
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon five-spice powder
  • 2 bunches green onion, chopped
  • 16 chicken tenders (approx. 2 lbs)

Curried Peanut Chicken

  • 2 cups half & half
  • 1 1/2 cups mayonnaise
  • 3 tablespoons mango chutney
  • 2 tablespoons dry sherry
  • 1 tablespoon sherry vinegar
  • 2 tablespoons curry powder + 1 teaspoon
  • 1 teaspoon turmeric
  • 2 cups finely chopped salted roasted peanuts

  • Add chopped green onions and chicken tenders. Coat well.
  • Cover and refrigerate overnight.

  • For Curried Peanut Chicken:
  • Preheat the oven to 350°F (175°C).
  • Place chicken breasts in a shallow dish, pour half & half over them, and bake for 30 minutes.
  • Let chicken cool, then cut into 1-inch cubes.
  • Blend mayonnaise, chutney, sherry, vinegar, curry powder, and turmeric in a food processor.
  • Dip chicken pieces into the curry mayonnaise, then roll in chopped peanuts.
  • Chill for 30 minutes before serving. Arrange on a plate with toothpicks.

Notes

Adjust seasonings to taste, and feel free to experiment with alternate coatings like cashews or panko.

These recipes prove you don’t need a chef’s hat to whip up something worth talking about. The Oriental Chicken Tenders deliver bold flavors with minimal effort, while the Curried Peanut Chicken takes you on a crunchy, creamy adventure.

Serve them as appetizers or the star of the table—either way, don’t be surprised if someone asks for the recipe.
